Sweet Potato Bacon Hash

One of my (our) goals for 2015 is to be making healthier choices BUT still stick to our $220.00 a month grocery budget for a family of 4.

This task is not as hard as one may thing because the middle of the grocery store, (convenience items and mostly the more processed items) is much more expensive than purchasing the ingredients you need to make something. Plus, most of the time you can get two or three meals for the price of 1 convenience meal.

I wanted to share our new favorite Saturday Morning Breakfast with you!!

Sweet Potato bacon hash

1 Sweet Potato
2 Medium Potatoes
1 Egg per person
1/4 Package of Bacon
1/4 Teaspoon of Onion powder
1/4 Teaspoon  of Garlic powder
Salt and Pepper to taste
Shredded Cheese (optional)
Olive Oil about 2 or 3 circles around the pan

 Step 1:
Wash, peel, and cube potato and Sweet Potato all around the same size so they cook evenly and at the same time

Step 2:
Roughly chop bacon
TIP: When I am working with smaller amounts of bacon I like to use FROZEN bacon. It makes cutting so much easier and takes much less time

Step 3:
Toss all the potatoes, bacon, garlic, onion powder, salt and pepper in a pan over med-high heat; I like to cover mine with a lid for about 5-8 minutes. This helps the potatoes to become tender quickly and give them a nice browning color.

Step 4:
Once the potatoes and bacon are cooked; move towards the outside of the pan to make an opening in the middle. Add your eggs and scramble

 Step 5:
Remove from heat, add shredded cheese if desired and serve!

This meal has quickly become one of our favorites; it takes less than 20 minutes including prep time and is delicious.

My favorite part is that all of the ingredients are always in our home but even if they were not the meal is a great Family Friendly option:

10 1b Bag of Russell Potatoes:           $3.59 (Aldi)
1 Sweet potato:                                   .79( buy a larger bag at Aldi for 1.99)
Bacon:                                                 $4.00 (we only use 1/4 of this recipe or  $1.00)
Shredded Cheese:                               $2.50
Eggs:                                                   $2.09 
Spices, salt, Pepper pantry items:       Free

Total for 1 Meal: $2.69! If you had to purchase all of the non pantry items it would be $14.17 and provide you with 4 meals or total cost of $3.54.
